Vajalikud\u00a0 toitaineid tuleks saada tasakaalustatud igap\u00e4evasest men\u00fc\u00fcst.<\/strong><\/p>\n<p><strong>Milline on Teie arvates Eesti toidukultuur?<\/strong><\/p>\n<p>Raske \u00f6elda. Toidupoed on t\u00e4is kirevaid karpe ja kotte, mis r\u00e4ndavad ostuk\u00e4rudesse. Jagaksin ostjad kahte gruppi: peretraditsioonide j\u00e4rgi tuntud toidu tarbijad ja teine grupp on nooremad ostjad, kes on valmistoitude otsijad. Kahjuks s\u00f6\u00f6vad pered harva koos \u00fchise laua taga ja see loob kotist ning karbist s\u00f6\u00f6mise mentaliteedi ja kr\u00f5psude ning v\u00f5ileibade s\u00f6\u00f6mise harjumuse.<\/p>\n<p>Minu arvates on aga hea suund see, et on tekkinud peresid, kus nauditakse \u00fchist toiduvalmistamist ja hinnatakse eri maade k\u00f6\u00f6gikultuuri ning toiduretsepte. Globaliseerumine ja reisimine toob kaasa m\u00f5ndagi, mida hakkame \u00fcha rohkem toidulaual n\u00e4gema.<\/p>\n<p><strong>Mida t\u00e4hendab tasakaalustatud ja mitmek\u00fclgne toitumine?<\/strong><\/p>\n<p>Tasakaalustatud toitumisel peame saama toiduenergiat s\u00fcsivesikutest (50-60%), valkudest (10-20%) ja rasvadest (25-35%). Suhtarvud muutuvad individuaalsust arvestades, aga sellep\u00e4rast ongi soovitustes antud teatud piirid. Palju s\u00f5ltub ka kliimast, n\u00e4iteks vajame r\u00f5sketel aastaaegadel rohkem valku. Loomset p\u00e4ritolu valkude parimad allikad on muna, piimatooted, linnuliha, liha, kala.<\/p>\n<p>Loomset p\u00e4ritolu toitudes on suures koguses k\u00f5rge biov\u00e4\u00e4rtusega valke ja need on suhteliselt h\u00e4sti seeditavad. Taimset p\u00e4ritolu valkude parimaks allikaks on kaunviljad, p\u00e4hklid, seemned ja teraviljatooted. K\u00f5ike on vaja!<\/p>\n<p>Kahtlemata on k\u00f5ik toitained, ka vitamiinid ja mineraalained k\u00f5ige paremini omastatavad toidust. Kuigi teaduslikult v\u00f5ime kogu keemia iga toiduaine kohta mikrogrammides v\u00e4lja tuua, ei anna \u00fcksikud arvud t\u00e4ielikku informatsiooni selle kohta, mida me tegelikult omastame. Seega inimene peab k\u00f5ik vajaliku saama tasakaalustatud igap\u00e4evasest men\u00fc\u00fcst (mitte apteegist!).<\/p>\n<p><strong>Kui oluline on liha inimese tervisele?<\/strong><\/p>\n<p>Liha on hea ja vajalik toit, kuna see sisaldab vitamiini B12, mis ennetab aneemiaid, on vajalik n\u00e4rvikoe normaalseks arenemiseks ja hoiab korras vaimset tervist. B12 vitamiini pole aedviljades ja seega on vaja liha s\u00fc\u00fca.<\/p>\n<p>Liha sisaldab h\u00e4sti imenduvat rauda ning lisaks on selles vitamiin B6, mis samuti osaleb punaste vereliblede valmimises, \u00f5nnehormooni (serotoniini) tekkes ja tagab k\u00f5igi toitainete normaalse ainevahetuse. B6 vitamiini on n\u00e4iteks sealihas 0,3 mg, porgandis aga 10 korda v\u00e4hem \u2013 0,03 mg.<\/p>\n<p><strong>Kui palju v\u00f5ib s\u00fc\u00fca sealiha, kui palju veiseliha?<\/strong><\/p>\n<p>Sealiha soovitame sarnaselt teistele lihagruppidele s\u00fc\u00fca n\u00e4dalas umbes pool kilo (kuumt\u00f6\u00f6deldult), t\u00f6\u00f6tlemata kujul oleks see 700 grammi. V\u00e4hemalt paar korda kuus v\u00f5iks s\u00fc\u00fca ka veiseliha, milles on rohkem rauda. Raud imendub h\u00e4sti C-vitamiini lisamisel, seega sobivad toidu k\u00f5rvale salatid.<\/p>\n<p>Inimene vajab erinevaid rasvhappeid ja seet\u00f5ttu on rasvade osas omad soovitused. V\u00f5iks eelistada taist liha, fileed ja s\u00fc\u00fca v\u00e4hem n\u00e4htava rasvaga, pekist liha.<\/p>\n<p>Samas v\u00f5iks arvestada, et inimene vajab k\u00f5ike ja ei tohi unustada, et on neli rasvlahustuvat vitamiini \u2013 A, E, D ja K, mist\u00f5ttu rasva ei ole vaja karta! Termoregulatsiooniks vajab inimene energiat, ka selleks on rasvkude h\u00e4davajalik.<\/p>\n<p><strong>Millised on teie kui arsti soovitused, kuidas tervislikult s\u00fc\u00fca?<\/strong><\/p>\n<p>Toidu valmistamisel tuleks m\u00f5elda sellele, kuidas kogu pere saaks k\u00f5ik vajalikud toitained k\u00e4tte, sealhulgas piisavalt aedvilju. Soovitan v\u00f5tta toiduvalmistamisel v\u00e4ikese t\u00fckikese liha ja suure koguse aedvilju, n\u00e4iteks annab sibula ja k\u00fc\u00fcslauguga l\u00e4bikuumutatud liha k\u00f6\u00f6giviljaroale palju maitset juurde.<\/p>\n<p>T\u00e4iskasvanute aedviljatoite sobib maitsestada nii kodumaiste kui ka idamaiste v\u00fcrtsidega, t\u0161illiga, v\u00fcrtsiste kastmetega, neid saab hapendada, fermenteerida, marineerida jm. Lastele see alati ei sobi. Lapse magu on \u00f5rn ja v\u00fcrtsid \u00e4rritavad liigselt mao limaskesta. Seep\u00e4rast on lastele v\u00e4ga hea toit koos teraviljatoodete v\u00f5i kartuliga taine sealiha, milles on alati \u00f5rna maitset tekitavaid rasvakiude lihaskiudude vahel. Laps vajab arenemiseks ja kasvamiseks rohkem rasva. Loomulikult tuleb m\u00f5elda targalt \u2013 kui kuni 3-aastasele lapsele anda n\u00e4dalas 60 grammi liha, siis see on talle piisav ja ei ole p\u00f5hjust arvata, et seda on palju.<\/p>\n<p>Halba v\u00f5ib teha ainult \u00fcles\u00f6\u00f6mine, millega kaasneb igal juhul terve probleemide ahel, alates \u00fclekaalust ja s\u00fcdamehaigustest ning l\u00f5petades podagraga (organismi ainevahetuse h\u00e4ire). Liha ei ole kunagi Eestimaal s\u00f6\u00f6dud nii palju kui praegu, kuid see ei tee veel liha halvaks ja kahjulikuks toiduks. \u00c4ra v\u00f5ib tappa ka kilode kaupa ubade s\u00f6\u00f6mine!<\/p>\n<p><strong>Kas k\u00f5rge kolesterool on seotud pigem geneetika v\u00f5i toitumisega?\u00a0<\/strong><\/p>\n<p>Kolesterool on vajalik hormoonide ja osade sapihapete s\u00fcnteesimiseks. Seda saame toiduga, kuid see imendub halvasti ning pole vaja karta, et saame liiga palju.<\/p>\n<p>&nbsp;<\/p>\n<p>Oht on ainult siis, kui pidevalt ja suures koguses kolesteroolirikast toitu s\u00fc\u00fca, tarbides liigselt k\u00fcllastunud rasvhappeid. Siis suureneb sapikivide tekkeoht ja s\u00fcdamehaiguste tekkerisk.
